Tofu bhurji is crumbled tofu cooked with onion, tomato, and Indian spices until dry, spicy, and scoopable. It's the vegan version of egg bhurji and works like paneer bhurji. It takes about 20 minutes in one pan, and you can eat it with toast, roti, or a wrap.

What Is Tofu Bhurji?
Bhurji means "scrambled" in Hindi. In Indian homes, bhurji is usually made with eggs (anda bhurji) or crumbled paneer (paneer bhurji). Tofu bhurji uses the same method: temper the spices, build an onion-tomato masala, and cook crumbled tofu in it until the moisture is gone. The result tastes of cumin, turmeric, and garam masala. It's closer to a masala than to a general tofu scramble.
Ingredients
- Firm tofu: One 14 oz (400 g) block. Crumbled firm tofu holds its texture like paneer. Silken tofu gives a softer, creamier result (see Tips).
- Oil: Mustard Oil (For Authentic Indian flavor), Avocado oil, olive oil, or any neutral oil.
- Cumin seeds: The tempering that starts the flavor.
- Onion, tomato, green chili: The base masala.
- Ginger-garlic: Fresh, chopped or grated.
- Spices: Turmeric, red chili powder, amchur, and garam masala.
- Kasuri methi (dried fenugreek leaves): Optional, but it adds a restaurant-style aroma.
- Lemon juice and fresh cilantro: To finish.
How to Make Tofu Bhurji
- Prep the tofu. Drain the block and press it between paper towels or a clean dish towel for 10 minutes. Crumble it with your hands into small, uneven pieces.
- Temper the cumin. Heat the oil in a wide pan over medium heat. Add cumin seeds and let them sizzle for 20-30 seconds.
- Cook the onion. Add chopped onion and green chili. Sautรฉ 4-5 minutes until soft and golden at the edges.
- Add ginger-garlic. Stir for about a minute until the raw smell goes away.
- Build the masala. Add tomato, turmeric, chili powder, amchur, and salt. Cook 4-5 minutes, mashing the tomato, until it breaks down and the oil starts to separate at the edges.
- Add the tofu. Stir in the crumbled tofu and cook 5-6 minutes, stirring often, until the moisture has cooked off and the bhurji looks dry and well coated.
- Finish. Add garam masala, crushed kasuri methi, lemon juice, and cilantro. Taste and adjust the salt.

Tips for the Best Tofu Bhurji
- Don't skip pressing. Excess water makes the bhurji soggy and dilutes the masala.
- Crumble by hand. You get varied, scramble-like pieces instead of a uniform mash.
- Cook the masala properly first. Tomatoes that are still raw taste sharp. Wait until the oil separates.
- Season before you finish. Tofu is mild, so the salt and spices need to be assertive.
- Want it softer? Use silken tofu, cook a few extra minutes to evaporate the water. The texture will be more like soft scrambled eggs.
- Add vegetables. Diced bell pepper, spinach, peas, or grated carrot can go in with the tomato.
What to Serve With Tofu Bhurji
- Buttered toast or pav for breakfast
- Hot roti, paratha, or phulka
- Rolled into a wrap with chutney and sliced onion
- Over rice with dal for a simple lunch or dinner
- Stuffed into a sandwich or a chilla
- With a side of yogurt or raita (use a plant-based yogurt to keep it vegan)
Storage and Meal Prep
- Refrigerator: Cool completely, then store in an airtight container for up to 3-4 days.
- Reheating: Warm in a pan with a splash of water, or microwave in 30-second bursts, stirring in between.
- Freezer: Tofu changes texture when frozen, so I recommend refrigerating only.
- Meal prep: Cook a batch on Sunday and use it for wraps and sandwiches through the week.
