This thecha paneer recipe coats soft paneer in a spicy, nutty green chili and garlic paste, then sears it until golden. Crushed in a mortar and pestle, it's a high-protein appetizer ready in under an hour.

If you love bold, garlicky, fiery flavors, this thecha paneer recipe is about to become a regular in your kitchen. Thecha paneer (also called paneer thecha) pairs soft, creamy paneer cubes with a fresh green chili, garlic, and peanut paste from Maharashtra. The paneer soaks up the paste, gets seared until golden, and finishes with a squeeze of lemon. The result is a high-protein vegetarian appetizer that tastes like it came from a street-side grill, yet takes under an hour with most of that time being hands-off marinating.

This paneer thecha recipe works as a party starter, a protein-packed side, a filling for wraps, or even a dry sabzi served with roti. Below you'll find the full recipe, step-by-step method, three cooking options (skillet, air fryer, oven).

What Is Thecha?

Thecha is a rustic Maharashtrian condiment made by crushing green chilies with garlic, roasted peanuts, cumin, and fresh cilantro. Traditionally it is pounded in a stone mortar, which gives it a coarse, punchy texture. It is eaten alongside bhakri, jowar roti, and simple dal-rice meals, and a little goes a very long way.

When that same paste is used to coat paneer, you get thecha paneer: a simple fusion of a traditional chutney and a beloved North Indian-style tikka. The peanuts add body and a gentle nuttiness that balances the heat, while the garlic and cilantro keep everything bright and fresh.

Why You'll Love This Thecha Paneer Recipe

  • Ready in about 50 minutes, including a 30-minute marinade
  • High in protein and naturally vegetarian, and easy to make
  • Flexible cooking methods: skillet, air fryer, oven, or grill
  • Adjustable heat: mild, medium, or spicy
  • Versatile: serve it as an appetizer, in wraps, over salads, or with flatbread
  • Great for meal prep since the thecha paste keeps well in the fridge

Ingredients for Paneer Thecha

For the thecha paste

  • 2 teaspoons oil (avocado, peanut, or any neutral oil)
  • 5 to 6 green chilies (serrano or Thai chilies), stems removed
  • 8 to 10 garlic cloves, peeled
  • 1 inch fresh ginger, roughly chopped
  • 1 teaspoon cumin seeds
  • ยผ cup raw peanuts
  • 1 packed cup fresh cilantro (leaves and tender stems)
  • ยฝ to ยพ teaspoon coarse salt (kosher or rock salt), to taste
  • 1 to 2 tablespoons water (only needed for the blender method)
  • 1 tablespoon lemon juice

For the paneer

  • 14 oz (about 400 g) paneer (homemade or store-bought), cut into 1-inch cubes
  • 1 teaspoon oil for cooking
  • Extra lemon wedges and chopped cilantro to serve

How to Make Thecha Paneer (Step by Step)

1. Roast the aromatics for the thecha

Heat 2 teaspoons of oil in a small pan over low to medium heat. Add the green chilies, garlic, and ginger. Cook gently, stirring often, until the chilies blister lightly and the raw garlic smell mellows out. Add the peanuts and cumin seeds and toast for a minute or two until fragrant. Turn off the heat. Stir in the cilantro, it will wilt from the residual heat, about 30 seconds.

2. Grind to a coarse paste

Let the roasted mixture cool completely. In a mortar and pestle, add salt and cooled mixture, crush it coarsely. Work in batches if your mortar is small.

No mortar and pestle? Transfer the cooled mixture to a small blender or food processor. Add the salt, and 1 tablespoon of water, then pulse in short bursts, scraping down the sides, until you have a thick, slightly coarse paste. Avoid running the machine continuously, which makes the paste smooth and watery. Add more water a teaspoon at a time only if the blades can't catch.

3. Coat the paneer

Pat the paneer cubes dry with a paper towel so the paste clings. In a bowl, gently toss the cubes with the thecha until every piece is well coated.

4. Marinate

Cover and refrigerate for at least 30 minutes. An hour is even better if you have time, since the paneer absorbs more flavor the longer it rests.

5. Cook until golden

Choose one of these methods:

  • Skillet or tawa: Heat a cast iron skillet over medium-high heat with 1 teaspoon oil. Cook the paneer 2 to 3 minutes per side until the edges are browned and the paste smells toasty.
  • Air fryer: Cook at 380ยฐF (190ยฐC) for 8 to 10 minutes, shaking or flipping halfway.
  • Oven: Thread onto skewers or arrange on a lined sheet pan. Bake at 425ยฐF (220ยฐC) for 12 to 15 minutes, turning once, then broil for 1 to 2 minutes for color.

6. Finish and serve

Squeeze fresh lemon juice over the hot paneer, then garnish with crushed roasted peanuts for extra crunch and chopped cilantro. Serve immediately.

Tips for the Best Paneer Thecha

  1. Use fresh paneer. Homemade or fresh-from-the-package paneer absorbs the marinade better and stays soft after cooking. If it feels firm or rubbery, soak the cubes in warm salted water for 10 minutes before marinating.
  2. Control the heat. Chili strength varies a lot. Start with fewer chilies, taste the paste, and add more if you want extra fire. Removing the seeds gives a milder result.
  3. Don't skip the peanuts. They thicken the paste so it coats the paneer evenly and mellows the spice.
  4. Pat the paneer dry. Excess moisture prevents the paste from sticking and stops the paneer from browning.
  5. Use high heat, short time. Paneer turns dry if overcooked. You want golden edges and a soft center.
  6. Make the paste ahead. Thecha keeps in an airtight jar in the refrigerator for about 4 to 5 days, so you can marinate the paneer on short notice.

Variations

  • Creamy thecha paneer: Mix 1 to 2 tablespoons of thick Greek yogurt into the marinade for a softer, tangier coating.
  • Sesame or coconut twist: Replace half the peanuts with toasted sesame seeds or add a spoonful of grated coconut for a different nutty profile.
  • Grilled skewers: Alternate paneer with bell pepper, onion, and zucchini for veggie tikka-style kebabs.
  • Tofu thecha: Swap in extra-firm tofu for a vegan version. Press it well first.
  • Thecha paneer curry: Sautรฉ the marinated paneer with a little sliced onion and tomato for a quick dry curry.

What to Serve with Thecha Paneer

This paneer thecha is wonderfully versatile:

  • Wrap it in a roti, paratha, or tortilla with sliced onions and a drizzle of yogurt for a quick paneer thecha roll
  • Add it to a bowl with rice, cucumber salad, and raita for a balanced high-protein meal
  • Serve it as a cocktail-party appetizer with toothpicks, lemon wedges, and mint chutney
  • Tuck it into a burger bun or sandwich with crunchy lettuce
  • Pair with jowar or bajra bhakri for a more traditional Maharashtrian meal

Storage and Meal Prep

  • Thecha paste: Refrigerate in a clean jar for 4 to 5 days, or freeze in an ice cube tray for up to 2 months.
  • Marinated paneer: Keep covered in the fridge for up to 24 hours before cooking.
  • Cooked paneer: Store in an airtight container for up to 3 days. Reheat gently in a skillet or air fryer so it doesn't turn rubbery.

Is Thecha Paneer Healthy?

Paneer is a good source of protein and calcium, and the thecha adds fiber, healthy fats, and plenty of flavor from whole ingredients like garlic, cilantro, and peanuts, with no heavy cream or processed sauces. Because the dish uses very little oil, it fits well into a vegetarian, high-protein eating pattern. Keep portions in mind if you're watching sodium or saturated fat, and choose low-fat paneer if you prefer a lighter option.

Common Questions

What is thecha paneer?

Thecha paneer is a spicy Indian appetizer made by coating paneer cubes in thecha, a Maharashtrian paste of green chilies, garlic, peanuts, cumin, and cilantro, then searing or grilling them until golden.

Can I make thecha paneer in an air fryer?

Absolutely. Air fry marinated paneer at 380ยฐF for 8 to 10 minutes, flipping halfway, until the edges look golden and lightly crisp.

How is this different from regular paneer tikka?

Paneer tikka is usually marinated in yogurt and spices like garam masala and Kashmiri chili. Thecha paneer uses a fresh green chili-garlic-peanut paste with no dairy marinade, giving it a sharper, herby, more rustic flavor.

This thecha paneer recipe shows how a few humble ingredients can turn into something memorable. Crushed coarsely in a mortar and pestle, the green chili, garlic, and peanut paste gives paneer thecha its bold, rustic flavor, and a food processor works well too when you're short on time. Spicy, nutty, and satisfying, it's easy enough for a weeknight and impressive enough for guests. Make a jar of thecha at the start of the week and you'll have a quick flavor boost ready for paneer, roasted vegetables, sandwiches, and more.
