During a Diwali celebration at my friend's house, I tried this 2-ingredient mango ice cream barfi. Its creamy texture and the tantalizing burst of mango flavor left an unforgettable mark on my taste buds.

With each bite, the sweet mango aroma reminded me of the summers back home and it's creamy texture about the homemade Indian sweets my mom used to make when I was little.

I couldn't resist the urge to recreate it at home. And I am so glad I did try it. The result was nothing but fantastic.

The barfi or fudge I made was absolutely amazing, a perfect fusion of sweetness and creaminess in every bite. It was a moment of sheer joy!

It's now a tradition at my home of making this mango burfi for festivals like Diwali and Holi.

Ingredients

Here's a brief description of the ingredients used in making mango ice cream barfi:

  1. Mango Ice Cream: Mango ice has a rich and creamy texture and a delightful mango flavor. The mango ice cream used in this recipe serves as the base ingredient, providing both the mango flavor and the creamy texture to the barfi.
  2. Milk Powder: Milk powder is added to the melted mango ice cream to thicken and solidify the mixture, creating a fudgy, barfi-like texture.
  3. Nuts (Optional): Chopped nuts like almonds, cashews, or pistachios, can be added to the mango ice cream barfi for extra flavor and a delightful crunch. Nuts not only provide a pleasing contrast in texture but also bring a nutty aroma and richness to the dessert.
  4. Saffron (Optional): Saffron strands can be added to the mango ice cream barfi for a touch of exotic aroma and a luxurious appearance.
  5. Silver Warq (Varak): Silver warq, or edible silver leaf, is a delicate, edible decoration commonly used in Indian sweets and desserts. It adds a touch of elegance and visual appeal to the dish, making it look more festive and celebratory. It's often applied as a very thin layer on the surface of the barfi.

These main two ingredients are combined to create a simple and delicious mango ice cream barfi with the sweet and tropical taste of mango.

Optional ingredients are used to customize mango ice cream barfi, adding flavor, texture, and visual appeal to suit your preferences and make the dessert even more special.

How To Make Mango Ice Cream Barfi

Making a 2-ingredient mango ice cream barfi is a simple and delicious dessert idea. Here's a quick recipe for it:

1- Take a non-stick pan or a heavy-bottomed saucepan. Heat it over low to medium heat.

2- Scoop the mango ice cream into the pan.

3- Continuously stir the ice cream as it melts and heats. You want to prevent the ice cream from sticking to the pan or burning.

4- As the ice cream melts, it will start to bubble and reduce in volume. Keep stirring.

5- Gradually add the milk powder while stirring continuously. This will help thicken the mixture and give it a fudge-like consistency. Continue adding milk powder and stirring until it reaches a soft dough ball consistency.

6- Keep cooking and stirring until the mixture thickens and begins to leave the sides of the pan. It should be pliable like a dough.

7- Once you achieve the desired consistency, remove the pan from the heat.

8- Transfer the mixture to a greased plate or tray and smooth it out evenly. You can use a spatula or the back of a greased spoon to level it.

9- Optional: You can garnish it with chopped nuts, saffron strands, or a sprinkle of edible glitter for added appeal.

10- Allow the mixture to cool at room temperature for a bit, and then refrigerate it for a few hours or until it sets and becomes firm.

11- Once the mango ice cream barfi has set, cut it into squares or diamond shapes.
