This Instant Pot Cilantro Lime Rice tastes just like the one from Chipotle, only better, because you control exactly how much lime and cilantro goes in. It's fluffy, zesty, and ready in about 20 minutes with almost no hands-on effort.
This is one of the most-made side dishes in my house. We're a Mexican-food-loving family, and once I started making this at home, store-bought versions stopped cutting it. A handful of pantry staples, one Instant Pot, and you've got restaurant-quality rice on your table.

About This Recipe
Cilantro lime rice is a Chipotle classic for good reason: bright lime juice and fresh cilantro turn plain white rice into something you actually look forward to. Making it in the Instant Pot removes all the guesswork - no burning, no mushy grains, no babysitting the stove. I've made this recipe for years, and it consistently comes out fluffy, fragrant, and just tangy enough.

Why You'll Love This Recipe
- Just like Chipotle - same bright, herby flavor you're craving, made at home
- Ready in 20 minutes - mostly hands-off, thanks to the Instant Pot
- Foolproof - no rice-cooking guesswork
- Meal-prep and freezer friendly - make a double batch and portion it out
- Naturally vegan and gluten-free

Ingredients
- Long-grain white rice - produces separate, fluffy grains. Basmati or jasmine work too.
- Fresh cilantro - leaves and tender stems both work.
- Lime juice + zest - fresh, not bottled. Zest gives aroma; juice gives tang.
- Neutral oil (or butter) - sautés the rice and prevents sticking.
- Water or low-sodium broth - broth adds extra flavor; use low-sodium if seasoning separately.

How to Make It (Step by Step)
1. Prep: Rinse the rice in a fine-mesh sieve under cold water until it runs clear, then drain well. Zest the lime, then juice it (about 1½ tablespoons from half a lime). Chop the cilantro.
2. Cook: Add oil, rinsed rice, water or broth, and salt to the Instant Pot. Stir gently, close the lid, and set the vent to sealed. Cook on Manual/Pressure Cook, high, for 6 minutes. Let the pressure release naturally for 10 minutes, then turn off Keep Warm.
3. Finish: Open the lid and fluff the rice with a fork. Fold in the lime zest, lime juice, and cilantro.

Stovetop version: Combine the same ingredients in a pot, bring to a boil, reduce heat, cover, and simmer 10-15 minutes until the rice is cooked. Finish the same way.
Build a Burrito Bowl
This rice is the easiest way to build a Chipotle-style bowl at home. Start with a base of cilantro lime rice, then layer on:
- Protein: grilled chicken, Mexican black beans, sofritas, or pan-seared tofu
- Veggies: sautéed peppers and onions, corn, diced tomato, avocado
- Toppings: shredded cheese, salsa, sour cream, a squeeze of extra lime
It also works rolled into a burrito, scooped into tacos, or served alongside enchiladas.
Variations & Substitutions
- Brown rice: increase cook time to 22 minutes with the same natural release
- No cilantro: swap in fresh parsley or basil
- More flavor: stir in a pinch of cumin or chopped green onion
- Spicy: add minced jalapeño or red pepper flakes
- Extra richness: a touch of garlic stirred in with the cilantro takes it up a notch

Pro Tips
- Use long-grain rice - The grains have a firm, dry texture, and are best for side dishes, pilafs, fried rice. Produces distinct firm grains that stay fluffy and separate even after cooking. You can use white or brown rice for this dish
- Rinse the rice to remove excess starch - this is what keeps it fluffy instead of gummy
- Oil goes in first to keep rice from sticking to the bottom of the pot
- Zest before you juice - it's much easier that way
- Don't skip the rest time; the natural release is what makes the texture work
- Add cilantro last, off heat, so it stays bright green instead of wilting and darkening
- Turn off Keep Warm immediately, or the rice will overcook and dry out
Storage & Freezing
Fridge: Cool completely, then store in an airtight container for up to 3 days.
Freezer: This rice freezes well - portion it into freezer bags or containers and freeze for up to 2 months. Thaw in the fridge overnight before reheating.
Reheat:
- Instant Pot: Add rice with 2-3 tablespoons water per cup, set to Manual/Pressure Cook on high for 0 minutes, then natural release 5 minutes.
- Stovetop: Add a splash of water, cover, and warm over medium heat for 3-5 minutes.
- Microwave: Add a splash of water, cover loosely to trap steam, and heat until warmed through.
