WHAT IS FUDGE
Fudge is a type of dense milk-based candy that is made by mixing sugar, butter, and milk. The ingredients are heated until it reaches a soft-ball stage at 240 °F (116 °C). The mixture is then beaten as it cools, to achieve a smooth, creamy consistency. Fudge is firm and smooth, not soft or crumbly, and has a slightly chewy texture.

HOW TO MAKE CHOCOLATE FUDGE
This is a quick and easy recipe to make homemade fudge. Add chocolate, and condensed milk to a bowl. Using a double boiler, melt the chocolate. Stir chocolate and condensed milk until well combined. Pour this melted chocolate into a lined baking dish. Add any topping of your choice such as marshmallows, crushed peppermint candy, caramel toffee bites, etc.
Let the chocolate firm up completely before taking it out of the baking dish. Once firm, remove and cut into desired pieces. Store it in an air-tight container in a refrigerator for up to a month.
INSTANT POT CHOCOLATE FUDGE
Love making this chocolate fudge in Instant Pot. You could use the stovetop for making the same. The double boiler method works just fine in either case.
EQUIPMENT REQUIRED
Glass or steel bowl that sits well on top of your Instant Pot liner
Whisk or spatula
5 * 8-inch baking dish
parchment paper
INSTRUCTIONS
- Grease the baking dish with some butter. Line the baking dish with some parchment paper.
- Add 2 cups of water to the inner pot of the Instant Pot. Now place a bowl on top of the Instant Pot.
- Turn ON Instant Pot on saute mode (more). Add the chocolate, prepared coffee, and condensed milk to a bowl. Mix until all the chocolate has melted, it will take around 4-5 minutes. Turn off Instant Pot.
- Stir in vanilla extract. Remove the bowl from the heat.
- Pour the melted chocolate into a baking dish lined with parchment paper.
- Using a spatula, smooth the fudge surface.
Add any toppings of your choice - marshmallows, crushed peppermint candy, caramel bites.
Let the hot chocolate fudge cool completely for around 1-2 hours.
Once cooled, cut the chocolate fudge into desired pieces.
Store it in an air-tight container in a refrigerator.

WHAT CHOCOLATE TO USE FOR CHOCOLATE FUDGE
For making fudge, melt-able chocolate chips or discs are ideal. These are also known as baking chocolate. These chocolates come in a varying percentage of cacao used in each.
For instance, dark chocolate comes with a higher percentage of cacao, whereas milk chocolate has a less percentage of cacao, as it contains more milk and sugar, for a creamy, mild flavor.
Also, the higher the percentage of cacao in chocolate, the chocolate will be bitter. So, depending upon how sweet you like your fudge, you can choose the chocolate.
Both dark chocolate and milk chocolate would work fine. However, dark chocolate contributes to a very rich, intense chocolaty flavor.
I do not prefer white chocolate as it is overly sweet for my taste.
