Gajar Matar Ki Sabji Ingredients

Here's a brief description of each ingredient:

  1. Mustard oil: A pungent oil extracted from mustard seeds, commonly used in Indian cooking for its distinct flavor.
  2. Jeera (Cumin seeds): Small, oblong seeds with a warm, earthy flavor, frequently used as a spice in various cuisines.
  3. Hing (Asafoetida): This is used as a spice to enhance flavor and aid digestion. It has a pungent smell when raw but imparts a savory taste when cooked.
  4. Ginger: It has a spicy and aromatic flavor, commonly used in cooking for its unique taste and health benefits.
  5. Green chilli: Fresh green peppers with varying levels of heat, used to add spiciness to dishes.
  6. Carrot: Known for its sweetness and vibrant color, rich in vitamins and minerals.
  7. Turmeric powder: A bright yellow spice with earthy and slightly bitter flavor, known for its anti-inflammatory properties.
  8. Frozen Green peas: Green peas are a nutritious addition to the dish. I have used frozen peas, but you can use fresh peas. Blanch the fresh peas and cook them along with carrots.
  9. Amchur powder (Dry Mango Powder): A tangy spice made from dried, unripe mangoes, used to add a sour flavor to dishes. You can use lemon juice also.
  10. Kasoori Methi (Dried Fenugreek leaves): Dried fenugreek leaves with a slightly bitter taste, adding a unique flavor to the dish.
  11. Coriander powder: Ground coriander seeds, providing a mild and citrusy flavor to the dish.

These ingredients come together to create a flavorful and nutritious Gajar Matar Ki Sabji.

Tips For Delicious Gajar Matar Ki Sabji

  1. Freshness Matters: Use fresh vegetables for the best taste. Choose firm and vibrant carrots, and ensure the frozen peas are of high quality.
  2. Control Spice Level: Adjust the quantity of green chillies and amchur powder according to your spice preference. Taste as you go and add more if needed.
  3. Mustard Oil Tip: If you find the flavor of mustard oil too strong, you can heat it until it smokes, then let it cool before using. This reduces its pungency while retaining the unique taste.
  4. Consistent Size: Cut the carrots into uniform-sized pieces to ensure even cooking. This helps in maintaining the texture and appearance of the dish.
  5. Monitor Cooking Time: Be mindful not to overcook the vegetables. They should be tender but still have a slight crunch for the best texture.
  6. Garnish Fresh: If using coriander leaves for garnish, add them just before serving to preserve their freshness and aroma.
  7. Serve Creatively: This versatile dish pairs well with various Indian bread like chapati, paratha, or naan, and it can also be served as a side dish with rice.
