    Air Fryer Eggplant Baingan Fry

    This Air Fryer Eggplant or Baingan Fry is a great healthy and a delicious alternative to traditional eggplant or Baingan fry, which is traditionally deep fried until crispy. The eggplant is air fried using some Indian spices, until it's crispy. 

    Eggplant or Baingan Fry is a very easy and a delicious recipe from Indian cuisine. This simple dish is made using eggplant or baingan and some basic Indian spices, makes this simple dish a very flavorful one. I love eggplant and this recipe is one of my favorites, the fact it's so easy to cook and delicious, I make it almost every week. And now, I make it more than once a week after I tried making it in the air fryer. This eggplant fry takes so much less oil, when air fried in a air fryer, compared to the traditional cooking. Thus, preserving the authenticity, and flavors of this dish. Air Fryer eggplant is one of the best air fryer recipe I have tried thus far. This healthy air fryer recipes, fried eggplant is the best ways to cook eggplant.

     

    Air Fryer Eggplant Baingan

     

     

    For this recipe, you can use any type of eggplant, Indian, American or Chinese, all taste great! Depending upon the type of the eggplant you choose, the cooking time will vary. I prefer eggplant which has least seeds, and therefore my pick of eggplant for this recipe is an American eggplant, which has more flesh and less seeds. Sometimes, I even discard the tough seeds out of it, before cooking. Today, I am sharing my recipe for eggplant fry using an American eggplant. I like to cut the eggplant into long, thin cuts. You can chop the eggplant as desired, just try to keep the size of the pieces same, so that they cook at the same time.

    This air fryer eggplant fry is crispy, air fried eggplant or baingan makes as a great side dish or even a very healthy snack. I like to serve this with some bread or roti and some dal/lentil. A healthy and a delicious recipe with just a few basic ingredients. Enjoy this healthy and delicious preparation of eggplant or baingan fry!!

    Air Fryer Eggplant / Baingan Fry

    Ingredients
      

    • 1 American Eggplant around 1 -1.5 lbs, chop into long, thin pieces
    • ½ tablespoon coriander powder
    • ½ teaspoon cumin powder
    • 1//2 teaspoon red chili powder as per taste
    • ½ teaspoon turmeric powder
    • ½ teaspoon dry mango powder optional
    • 2 tablespoon oil
    • Salt to taste
    • Oil for frying If using Stove Top Cooking

    For garnish:

    • Handful of fresh cilantro

    Instructions
     

    Instructions for Air Fryer Cooking:

    • Wash and pat dry eggplant, chop into long, thin pieces.
    • In a mixing bowl, add chopped eggplant, 1 tablespoon of oil, followed by dry spices. Mix well, so the spices coat evenly onto the eggplant pieces.
    • Pre-heat the air fryer to 370*Transfer the eggplant into the air fryer basket. Air fry eggplant at 370*F for 9 min. After 9 min, remove the basket, drizzle ½ tablespoon of oil, and shake the basket well.
    • Air fry the eggplant again at 370* F for 9 min. After 9 min, remove the basket, add ½ tablespoon of oil, shake the basket well.
    • Place the basket inside the air fryer, now depending upon the doneness of the eggplant, air fry for additional 5-7 min or until desired crispiness. I air fried for additional 7 min.
    • Garnish with some fresh cilantro. Serve hot with some bread or roti, and some lentil/dal. Enjoy!!

    Instructions for Convention Oven Cooking:

    • Wash and pat dry eggplant, chop into long, thin pieces.
    • In a mixing bowl, add chopped eggplant, 2 tablespoon of oil, followed by dry spices. Mix well, so the spices coat evenly onto the eggplant pieces.
    • Pre-heat the oven to 370*Spray 9*13 inch baking tray with some cooking oil. Transfer the eggplant onto a baking tray, into a single layer. Bake eggplant at 370*F for 9 min. After 9 min, remove the baking tray, now depending upon the doneness of the eggplant, bake for additional 5-7 min or until desired crispiness.
    • Garnish with some fresh cilantro. Serve hot with some bread or roti, and some lentil/dal. Enjoy!!

    Instructions for Stove Top Cooking:

    • Wash and pat dry eggplant, chop into long, thin pieces.
    • On a high heat, in a wok/kadai, add oil, when the oil is hot, add eggplant. Sprinkle some salt as you fry. Fry eggplant until light golden brown. Remove it on a paper towel, so that the excess oil is absorbed. Fry the eggplant into batches.
    • Add dry spices and mix well.
    • Garnish with some fresh cilantro. Serve hot with some bread or roti, and some lentil/dal. Enjoy!!

    Notes

    1. Depending upon the size of the eggplant pieces, the time will vary in all cooking methods.
    2. Thinner eggplant pieces will take less cooking time, as compared to thick eggplant pieces.
    3. Adjust the spiciness as per taste
    4. You can use any type of eggplant in this recipe, Indian, American or Chinese eggplant taste great.
    5. Different Air Fryer and Convention Oven will vary in cooking time. Please use timing as a guideline.
