I love arbi (taro roots). Whenever, I go for groceries I make sure to grab Arbi. Arbi (Colocasia) is available in most Asian and Indian stores and you may also find in some American stores as well.

Growing up, Arbi Tuk (smashed, crispy Taro Roots) was my favorite. Arbi tuk is a variation of popular Sindhi Aloo Tuk. I loved Arbi Tuk with Tidali Dal and Sindhi Kadhi

My mom used to make Arbi (Taro Roots) in many different ways - Arbi Tuk, Arbi Fry, Dahi Wali Arbi, Masala Arbi (dry or with some gravy), Arbi Chaat, and Arbi Fries (Taro Roots Fries).

Equipment

  • Cast Iron Pan

Ingredients
  

  • 6 medium-sized Arbi (Taro roots)
  • ¼ teaspoon ground turmeric
  • ½ teaspoon red chili powder ,adjust to taste
  • 2 teaspoons coriander powder
  • ½ teaspoon dry mango powder (amchur) or lemon juice
  • ¼ teaspoon cumin powder
  • ¼ teaspoon cumin seeds (jeera)
  • ⅛ teaspoon carom seeds (ajwain)
  • 1-2 whole dried red chili
  • pinch of asafetida
  • 2 tablespoon Mustard Oil or choice of your oil
  • salt to taste
  • Handful of cilantro for garnish

Instructions
 

  • Peel, wash, and pat dry the taro roots. Carefully, cut the arbi into julienne strips.
    Note: Be carefully when cutting the taro roots as it is quite slimy and tends to slip while cutting.
  • Heat mustard oil in a pan. Add ajwain, jeera, broken red chili, and a pinch of asafetida. Allow the seeds to crackle.
    Pro Tip: Cooking in cast iron pan gives best crispy Arbi!
  • Add turmeric powder and the cut arbi, give it a good mix. Cook on high heat for a few minutes to crisp up the arbi.
  • Now, add coriander powder, red chili powder, dry mango powder (amchur), and salt to taste. Mix well.
  • Cover and cook on medium heat, stirring occasionally, until the arbi is fully cooked and crispy.
  • Serve hot with dal, rice (chawal), and roti. Enjoy!
