What Is Dabeli Masala?

Dabeli Masala, also called Kutchi Dabeli Masala, is a traditional spice blend used to prepare the popular Gujarati street food, Dabeli. This snack originated in the Kutch region of Gujarat and is made with a spiced potato filling stuffed inside soft pav buns.

The masala combines earthy whole spices, fragrant fennel, warm cinnamon, dried red chilies, tangy dry mango powder, and a touch of sweetness. Dry coconut and sesame seeds add another layer of flavor and texture.

Although dabeli masala is primarily used to make dabeli, you can also use it to flavor potato dishes, chaat, sandwiches, and other Indian snacks.

Why Make Dabeli Masala at Home?

  • Fresh flavor: Roasting whole spices releases their natural aroma and brings out their flavor.
  • Easy to make: You only need a pan, a spice grinder, and a few basic ingredients.
  • Adjustable spice level: Use more or fewer dried chilies depending on your preference.
  • No unnecessary additives: You control the ingredients that go into your homemade spice blend.
  • Versatile: Use it for homemade dabeli and other savory snacks.

Ingredients

Here is what you need to make this flavorful Indian spice mix.

Whole spices

  • Coriander seeds: The main ingredient, adding a warm, earthy flavor.
  • Cumin seeds: Give the masala its characteristic savory aroma.
  • Fennel seeds: Add a mild sweetness that balances the heat.
  • White sesame seeds: Contribute a subtle nutty flavor.
  • Cloves: Add warmth and depth.
  • Black peppercorns: Provide a gentle peppery heat.
  • Cinnamon stick: Adds a sweet, woody aroma.
  • Star anise: Gives the masala a distinctive aromatic note.
  • Bay leaves: Add a subtle herbal flavor.
  • Dried red chilies: Bring heat and a roasted chili flavor.
  • Dry coconut: Adds nuttiness and richness.
  • Kashmiri red chili: Gives the masala a beautiful red color without making it excessively hot.

Ground spices and other ingredients

  • Dry mango powder (amchur): Adds a pleasant tangy taste.
  • Dry ginger powder: Provides a gentle warmth.
  • Black salt: Adds a distinctive savory flavor.
  • Sugar: Balances the spicy and tangy flavors. Grind regular granulated sugar into a fine powder if needed.
  • Oil: Helps bring the finished masala together.

For the best flavor, use fresh, aromatic spices in this recipe. If you enjoy making your own Indian spice blends, try my homemade garam masala recipe for another essential spice mix to keep in your kitchen.

How to Make Dabeli Masala

Step 1: Dry roast the whole spices

Heat a pan over medium-low heat. Add the coriander seeds, cumin seeds, fennel seeds, sesame seeds, cloves, black peppercorns, cinnamon, star anise, and bay leaves.

Dry roast for 3-4 minutes, stirring frequently, until the spices become fragrant. Avoid browning them too much, as burnt spices can make the masala bitter.

Step 2: Roast the dried chilies and coconut

Add the dried red chilies and grated dry coconut to the pan. Roast for another minute, stirring continuously, until the coconut is lightly toasted and aromatic.

Turn off the heat and transfer everything to a plate. Let the roasted ingredients cool completely before grinding.

Step 3: Grind the spices

Transfer the cooled spices and coconut to a spice grinder. Add dry mango powder, dry ginger powder, and black salt.

Grind until you get a fine or slightly coarse powder, depending on your preferred texture. If necessary, grind in batches to avoid overfilling the grinder.

Step 4: Add sugar and oil

Transfer the ground masala to a bowl. Add the powdered sugar and oil, then mix thoroughly until everything is evenly combined.

Step 5: Store the masala

Transfer the prepared masala to a clean, dry, airtight container. Refrigerate it to help preserve its aroma and freshness.

Tips

  • Roast on low to medium-low heat: Gentle roasting helps develop the spices aroma without burning them.
  • Cool before grinding: Hot spices can release moisture inside the grinder and affect the texture.
  • Adjust the heat: Use Kashmiri chili for a milder masala or dried red chilies for a little heat.
  • Use fresh spices: Older spices may have lost much of their aroma and flavor.
  • Grind in small batches: This helps you achieve a more even texture.
  • Keep moisture away: Always use a clean, completely dry spoon when taking masala from the container.

How to Use Dabeli Masala

The most popular way to use this spice blend is to make Kutchi Dabeli. Mix the masala with mashed boiled potatoes and a little oil to prepare the flavorful filling.

Spread tamarind chutney and red garlic chutney inside soft pav buns, add the potato filling, and top with roasted peanuts, pomegranate seeds, chopped onions, and sev. Toast the stuffed pav with butter until golden.

You can also try these ideas:

  • Sprinkle a little into potato chaat.
  • Add it to a savory potato filling for sandwiches, paratha, or wraps.
  • Use a small amount to season roasted potatoes.
  • Add it to homemade savory snacks for a sweet, spicy, tangy flavor.

Start with a small quantity and adjust to taste, as the masala contains several concentrated spices.

Storage

Store homemade dabeli masala in an airtight container in the refrigerator to maintain its freshness.

For the best flavor, use it within 3-4 weeks and check that it smells fresh before each use. Always use a dry spoon and avoid introducing moisture into the container.

Homemade Dabeli Masala is an easy way to bring the flavors of Gujarati street food into your kitchen. With freshly roasted spices, dry coconut, and a balance of sweet, tangy, and spicy flavors, this blend makes homemade dabeli even more delicious. Prepare a small batch, store it in the refrigerator, and keep it ready for your next street-food craving.
