  • Kalakand with Ricotta Cheese (Easy 6-Minute Milk Fudge)

Kalakand is a popular Indian milk cake known for its soft, moist texture, delicate graininess, and rich milky flavor. Traditionally, this Indian sweet is made by reducing milk and combining it with paneer or chenna. This kalakand recipe with ricotta cheese gives you the same delicious taste and texture with much less effort.

Ricotta cheese makes homemade kalakand easy to prepare without spending hours reducing milk. You can make it in the microwave or on the stovetop using simple ingredients like ricotta cheese, milk powder, condensed milk, cardamom, and ghee.

I love making this kalakand for festivals when I want something special without spending hours at the stove. Itโ€™s a lovely treat to share during Diwali, Holi, and it also works well for Ganesh Chaturthi, Janmashtami, and Navratri celebrations and also during summer's. This easy ricotta cheese kalakand is perfect for Diwali, Raksha Bandhan, Holi, or any time you want a homemade Indian sweet. Finish it with chopped pistachios, almonds, or a few strands of saffron for a festive touch.

Why You'll Love This Ricotta Cheese Kalakand

  • Easy to make: No need to boil and reduce gallons of milk.
  • Two cooking methods: Choose the microwave for convenience or the stovetop for traditional hands-on cooking.
  • Simple ingredients: Made with easy-to-find ingredients from your local grocery store.
  • Perfect for festivals: A wonderful homemade mithai for Diwali, Holi, Raksha Bandhan, and family celebrations.
  • Soft and creamy: Ricotta cheese gives kalakand its signature soft, slightly grainy texture.

What Is Kalakand?

Kalakand is a traditional Indian milk-based sweet, often described as Indian milk cake. It is made by cooking milk until it thickens and develops a soft, grainy texture. Sugar and cardamom add sweetness and fragrance, while nuts are often used for garnish.

Traditional kalakand takes time because the milk needs to be reduced slowly. Using ricotta cheese is a convenient shortcut that makes this beloved Indian mithai much easier to prepare at home.

Kalakand vs. Milk Cake

The two are cousins, but they arenโ€™t the same:

  • Kalakand is made from paneer (chenna - fresh curdled milk), so itโ€™s soft, moist, and white to pale cream.
  • Milk cake is made by curdling milk with alum (phitkari) and cooking it longer, so itโ€™s grainier, drier, and browner.

This ricotta version is closer to a smooth, soft burfi.

Why This Shortcut Works

  • Ricotta stands in for fresh chenna and gives the soft, milky body.
  • Sweetened condensed milk adds sweetness and thickness, so you skip hours of reducing milk.
  • Milk powder binds everything so the fudge sets firm enough to cut cleanly.

Ingredients

Ricotta cheese: Use whole-milk ricotta cheese for the richest flavor and creamiest texture. Drain off any excess liquid if your ricotta is particularly watery.

Milk powder: Helps thicken the mixture, adds a rich milky flavor, and gives the kalakand a more traditional milk-cake texture.

Condensed Milk: Adds sweetness. Adjust the amount to suit your taste.

Ghee: Adds richness and helps grease the pan or dish.

Cardamom powder: Gives kalakand its classic Indian sweet aroma.

Chopped pistachios or almonds: Optional, but they add color, flavor, and a lovely finish.

Saffron: Optional. A few strands can add a festive touch.

Microwave Kalakand

Use a large, deep microwave-safe glass bowl (at least 3 quarts). The mixture bubbles up and splatters as it cooks, so a roomy bowl keeps it from boiling over.

  1. Prep the pan. Line a 7ร—7 or 8ร—8 pan with parchment, or grease it lightly with ghee.
  2. Prepare the mixture. Add ricotta cheese, milk powder, and condensed milk to a large microwave-safe bowl. Mix well until combined.
  3. Microwave. Cook in short intervals, stirring well after every 2 minutes. Continue cooking until the mixture thickens and most of the excess moisture evaporates. Depending on your microwave and the moisture in the ricotta, this can take approximately 6-8 minutes or longer.
  4. Add flavorings. Stir in the ghee and cardamom powder. Mix thoroughly.
  5. Check the consistency. The mixture should be thick, moist, and able to hold its shape. Avoid overcooking, as the kalakand can become dry or rubbery.
  6. Set the kalakand. Grease a small tray or dish with ghee. Transfer the mixture and spread it evenly.
  7. Garnish and chill. Sprinkle with chopped pistachios or almonds and gently press them into the surface. Refrigerate 1-2 hours, then cut into squares, wiping the knife between cuts.

How to Make It on Stovetop

  1. Prep the pan. Line a 7ร—7 or 8ร—8 pan with parchment, or grease it lightly with ghee.
  2. Combine. In a non-stick pan, mix the ricotta, condensed milk, and milk powder over medium heat. Stir until smooth. It will look quite thin at this stage.
  3. Cook down. Reduce to low-medium and stir often. The mixture starts thickening after about 10 minutes.
  4. Watch for the cue. Keep stirring until it pulls away from the sides of the pan and moves as one soft mass, around 18-20 minutes.
  5. Finish. Stir in the ghee, cardamom, and rose water, and cook another 1-2 minutes.
  6. Set. Spread into the pan and level with a ghee-greased spatula. Top with pistachios and saffron and press them in lightly.
  7. Chill and cut. Refrigerate 1-2 hours, then cut into squares.

Tips for Perfect Kalakand

  • Use full-fat ricotta. Part-skim ricotta gives a drier, less creamy fudge.
  • Drain excess liquid: If the ricotta has a lot of whey, draining it helps reduce cooking time.
  • Use a non-stick pan. The mixture gets sticky as it thickens, and constant stirring is the whole job.
  • Choose a wide pan: A wider cooking surface allows moisture to evaporate more quickly.
  • Stir frequently: This is especially important with the stovetop method to prevent the mixture from sticking.
  • Donโ€™t overcook. Past the point where it leaves the sides of the pan, milk sweets turn chewy. The mixture will firm up further as it cools and chills.
  • Cut after chilling: Refrigerating the kalakand helps you get neat, clean squares.Wipe the knife (or lightly ghee it) between every cut.
  • Adjust the sweetness: Taste the mixture before it becomes too hot to handle, and adjust the condensed milk early in the cooking process.

Storage

  • Refrigerator: Up to 1 week in an airtight container. Let it sit 10-15 minutes at room temperature before serving.
  • Freezer: Freezing is possible, but it may change the texture after thawing. For the freshest, creamiest results, I recommend making a batch you can enjoy within a few days. Freeze in a single layer, then store in a container. Thaw overnight in the fridge.

Serving Ideas

Kalakand is a natural for Diwali and Raksha Bandhan sweet boxes, but it works for any celebration. Serve each piece in a mini cupcake liner for a tidy mithai-platter look.

FAQs

Can I make kalakand without milk powder?

Milk powder helps thicken the mixture and adds a concentrated milky flavor. You can experiment without it, but the cooking time and final texture will be different. This recipe is designed to work best with milk powder.

Can I use paneer instead of ricotta?

Yes. Use 400 g of soft paneer (see Notes). The texture is crumblier, closer to chenna burfi.

Why is my kalakand sticky or not setting?

The mixture may still contain too much moisture or may need more time to chill. Cook it a little longer until it thickens, without drying it out, and refrigerate it before cutting.

Why is my kalakand chewy?

Overcooking can make kalakand dry, firm, or chewy. Stop cooking when the mixture is thick and holds together but still looks moist. Remember that it will firm up as it cools.

Is kalakand gluten-free?

Yes, as long as your ingredients are gluten-free. It is vegetarian, and it contains dairy and (optionally) nuts.

Can I make kalakand in the microwave?

Yes. A microwave-safe bowl and about 6 minutes of cooking, stirring between rounds, gives a soft, creamy kalakand. See the microwave method above.

This easy kalakand recipe with ricotta cheese is a wonderful way to enjoy homemade Indian milk cake without the long process of reducing milk. Whether you choose the microwave or stovetop method, the result is a delicious, milky sweet that's perfect for festivals, celebrations, or an everyday treat.

Make a batch, garnish it with your favorite nuts, and enjoy this simple homemade mithai with family and friends.

  • Set. Spread into the pan and level with a ghee-greased spatula. Top with pistachios and saffron and press them in lightly.
  • Chill and cut. Refrigerate 1-2 hours, then cut into squares.

Notes

  • Microwave wattage varies, so start checking at 4 minutes. Stop as soon as the mixture leaves the sides of the bowl, since overcooking makes milk sweets chewy.
  • Use oven mitts, because the bowl gets very hot.
  • Stir thoroughly each time, since the edges cook faster than the center.
  • Donโ€™t overcook. Stop as soon as the mixture leaves the sides of the pan, or the kalakand will turn chewy.
  • Paneer version: Use 400 g soft paneer in place of ricotta.ย
  • Sugar: Adjust by reducing the condensed milk slightly.
  • Storage: Fridge up to 1 week, or freeze and thaw overnight.
