For skewers:

  • 2 medium sweet potato (about 200-250g), peeled & cubed (1-inch)
  • 200g paneer, cut into 1-inch cubes
  • 1 tablespoon peanut oil or ghee (for brushing)
  • Wooden or metal skewers

For vrat spice mix:

  • 1 teaspoon sendha namak (rock salt), or to taste
  • ½ teaspoon black pepper powder
  • 1 teaspoon roasted cumin powder
  • ½ teaspoon dry mango powder (amchur)
  • ½ teaspoon chaat masala (optional, use vrat-friendly)
  • 1 tablespoon peanut oil or melted ghee
  • 1 teaspoon lemon juice

Instructions

1. Prep the sweet potatoes

  • Roast, boil or steam the sweet potato. They should be fork-tender but not mushy. For roasting method see below.
  • Drain and let them cool completely.

2. Prepare the spice mix

  • In a bowl, mix:
    • sendha namak
    • black pepper
    • roasted cumin powder
    • amchur
    • chaat masala (if using)
  • Add 1 tablespoon oil or ghee + lemon juice and mix into a thick paste.

3. Assemble skewers

  • Thread sweet potato and paneer alternately onto skewers.

4. Apply spice mix

  • Brush the spice mixture generously over the skewers on all sides.

Cooking Methods

Air Fryer Method

  • Preheat air fryer at 375°F (190°C) for 3-5 minutes
  • Place skewers in a single layer
  • Air fry for 10-12 minutes, flipping halfway
  • Lightly brush with ghee once halfway for extra flavor

Pan Seared Method

  • Heat a pan with 1-2 teaspoon ghee
  • Place skewers and cook on medium heat
  • Turn occasionally until golden and slightly crisp (about 8-10 minutes)
  • Lightly brush with ghee once halfway for extra flavor

Oven Method (Skewers)

  • Preheat oven to 400°F (200°C)
  • Place skewers on a lined tray
  • Bake for 12-15 minutes, flipping halfway
  • Lightly brush with ghee once halfway for extra flavor

Oven-Roasted Whole Sweet Potatoes

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and scrub the sweet potatoes well (keep them whole, don't peel).
  3. Place them in an oven-safe casserole dish.
  4. Add 2-3 tablespoons water to the dish.
  5. Cover tightly with a lid or foil.
  6. Bake for 35-50 minutes, until fork-tender (not mushy).
  7. Cool slightly, peel (optional), and cut into cubes.

Tip

  • Don't overbake, slightly firm sweet potatoes hold better on skewers and won't break while threading.
