Ingredients

For the potato filling

  • 1 lb (450 g) potatoes, boiled and mashed
  • 2 tablespoon neutral oil
  • 2 tablespoon dabeli masala (homemade or store-bought) or to taste
  • ¼ cup tamarind chutney or to taste
  • ½ cup water as needed
  • salt to taste

For assembling

  • 8 pav or soft dinner rolls
  • ½ cup red garlic chutney or as needed
  • ½ cup tamarind chutney or as needed
  • ½ cup green chutney , optional
  • ¾ cup roasted peanuts or masala peanuts ; see recipe notes
  • ½ cup finely chopped onion
  • ¾ cup pomegranate seeds
  • ¼ cup chopped cilantro
  • ¾ cup plain sev
  • 2-3 tablespoon butter or ghee as needed

Instructions

  • Boil the potatoes until fork-tender. Peel and mash.
  • Heat oil in a skillet or a pan over medium heat. Add the dabeli masala and stir briefly until fragrant. Add the tamarind chutney and 2 tablespoons of water, mixing well.
  • Add the mashed potatoes and salt to taste. Mix until the potatoes are evenly coated with the masala. Cook for 2-3 minutes, adding a splash of water if needed, until the filling is flavorful and well combined.
  • Transfer the filling to a plate or bowl. Sprinkle with some roasted peanuts, chopped onions, cilantro, and pomegranate seeds.
  • Slice each pav horizontally, keeping one edge attached.
Spread sweet tamarind chutney on one inner side and red garlic chutney on the other. For a milder version, substitute cilantro chutney for the garlic chutney.
  • Add roasted peanuts, chopped onions, and pomegranate seeds. Sprinkle with a little extra dabeli masala if desired.
Press the filling gently into the pav so it stays in place.
  • Heat a skillet or tawa over medium heat and add a little butter or ghee. Place the stuffed Dabeli on the pan and toast on both sides until the pav is lightly golden and crisp.
Press gently with a spatula while toasting if you like a slightly flattened, street-style finish. Avoid over-toasting, as the pav can become hard.
  • Spread the sev, remaining peanuts, chopped cilantro, and pomegranate seeds on separate plates or in shallow dish.
Gently press the open sides of each stuffed pav into the toppings so they stick to the potato filling and edges of the bun.
Serve immediately while warm and crispy.

Notes

  • Potatoes: Boil the potatoes until fork-tender and drain well to prevent a watery filling.
  • Dabeli masala: Use Homemade Dabeli Masala for the best flavor, or use store-bought masala.
  • Red garlic chutney: Adjust the quantity according to your spice preference. Use Kashmiri red chilies for a vibrant color with less heat.
  • Sweet and tangy flavor: Adjust the tamarind chutney to balance the spice and sweetness of the potato filling.
  • Toppings: Roasted peanuts add crunch, while pomegranate seeds provide a sweet-tart flavor. Sev gives Dabeli its signature crispy texture.
  • For Masala Peanuts: Heat 1 teaspoon oil in a pan, add ½ cup roasted peanuts, and toss with ½-1 teaspoon Homemade Dabeli Masala and a pinch of salt. Cook for 1-2 minutes, stirring well, then let cool before using as a crunchy Dabeli topping.
  • Make ahead: Prepare the potato filling, chutneys, and toppings ahead of time. Store them separately in the refrigerator.
  • Toasting: Toast the stuffed pav with butter or ghee over medium heat until golden and crisp.
  • Serving: Assemble and toast Dabeli just before serving for the best taste and texture.
  • Storage: Refrigerate leftover potato filling in an airtight container for up to 3 days. Reheat thoroughly before using. Avoid storing fully assembled Dabeli, as the pav and sev can become soggy.
