A quick and flavorful vrat-friendly green chutney made with peanuts, coriander, and simple fasting ingredients. Perfect for Navratri and pairs beautifully with sabudana vada, aloo tikki, and more.

Equipment

Ingredients
  

  • 1 cup fresh cilantro (dhaniya)
  • Handful of fresh mint leaves, optional
  • 2-3 green chilies
  • 1 tablespoon roasted peanuts or white sesame seeds
  • ½ teaspoon sendha namak (rock salt)
  • 1 teaspoon lemon juice or ½ teaspoon amchur
  • ½ teaspoon roasted cumin powder (jeera powder)
  • 2-3 tablespoon plain yogurt
  • 2-3 ice cubes
  • water as needed (for grinding)

Instructions
 

  • In a blender add cilantro, mint (optional), green chilies, peanuts/sesame seeds, cumin powder, sendha namak, and lemon juice.
  • Add yogurt, ice cubes and little water and blend into a smooth paste.
  • Taste and adjust salt or lemon as needed.
  • Serve fresh and enjoy!

Notes

Tips
  • Use fresh, tender coriander leaves for best flavor.
  • For extra flavor, add few mint leaves (optional but refreshing).
  • Adding yogurt makes it creamy and balances the spice.
  • For a tangy twist, add a small piece of raw mango (kaccha aam) when in season.
  • Adjust water carefully to control thickness.
  • If serving with chaat, make the chutney slightly thinner.
 
Variations
  1. Coconut Peanut Chutney (Vrat-Friendly) Add 1-2 tablespoon fresh coconut while blending for a richer taste.
  2. No-Coriander Version Replace coriander with fresh mint leaves for a refreshing mint-peanut chutney.
  3. Spicy Version Add extra green chilies or a pinch of black pepper.

Storage Tips
  1. Store in an airtight container in the refrigerator.
  2. Stays fresh for up to 2 days.
  3. Stir before serving as it may thicken over time.
