Quick Kalakand Recipe (Instant Kalakand with Ricotta Cheese)
Jyoti Behrani
Make soft, creamy, and delicious kalakand at home using ricotta cheese and condensed milk. This quick microwave recipe gives you the traditional grainy texture and rich milky flavor of kalakand without the long stovetop cooking process. A fuss-free Indian sweet perfect for Diwali and festive celebrations.
Lightly grease a square baking dish or container with ghee. Set aside.
Add ricotta cheese and condensed milk to a large microwave-safe bowl. Mix until well combined.
Microwave on high for 3 minutes. Carefully remove and stir well.
Continue to microwave in 1-minute intervals, stirring after each interval, until the mixture becomes thick, slightly grainy, and starts leaving the sides of the bowl. Approximately, 5-6 minutes total cook time, depending on the microwave wattage.
Add cardamom powder and saffron. Mix well.
Transfer the kalakand mixture into the greased dish. Spread evenly and gently press with a spatula.
Garnish with chopped pistachios and almonds. Gently press the nuts into the mixture.
Allow it to cool to room temperature, then refrigerate for 2-3 hours until firm.
Cut into squares or diamonds and serve.
Notes
Use whole milk ricotta cheese for rich and creamy kalakand.
If the ricotta has excess liquid, drain it before using.
Use a large microwave-safe bowl, as the mixture may bubble while cooking.
Stir every 1-2 minutes to prevent uneven cooking.
Microwave cooking time varies depending on wattage. Cook in additional 30-second intervals if needed.
The mixture should be thick but slightly moist. Avoid overcooking, as kalakand can become dry.
For firmer kalakand texture, add 1-2 tablespoons of milk powder.
For a richer flavor, add a little extra cardamom or saffron.
Refrigerate for at least 2 hours before cutting for neat squares.
Store in an airtight container in the refrigerator for 4-5 days.
