Instant Pot Cilantro Lime Rice (Chipotle Copycat)

This Instant Pot Cilantro Lime Rice tastes just like the one from Chipotle. Serve it with Mexican Black Beans for a complete meal, in a burrito bowl, or as a side with tacos.

Ingredients
  

  • 1 cup Long grain white rice, rinsed and drained
  • ½ cup lightly packed, fresh cilantro, chopped
  • 1 teaspoon Lime zest
  • 1 ½ tablespoon Freshly squeezed lime juice, (around half lime)
  • 1 tablespoon neutral oil
  • 1 ¼ cup water or Broth
  • ¼ teaspoon salt, adjust to taste

Instructions
 

Prep:

  • Using a fine mesh sieve, rinse the rice under cold running water for couple of minutes or until the water runs clear. Drain the rice well.
  • Zest the lime using Zester (Grater). Keep it aside.
  • Chop fresh cilantro, and juice from half the lime, around 1 ½ tablespoon. Keep it aside.

Instant Pot Cilantro Lime Rice

  • Add oil, rinsed, and drained rice, water or broth, and salt to taste. Mix gently. Close lid, vent sealed.
  • Turn ON Instant Pot to MANUAL / PRESSURE COOK mode (high) for 6 minutes. Let pressure release naturally, around 10 minutes.
    Note: Turn OFF “keep warm” mode.
  • Open the Instant Pot lid, using a fork, fluff the rice.
  • Add lime zest, lime juice, cilantro. Gently mix the rice.
  • Cilantro Lime Rice is ready to be served. Enjoy!!
  • Storage: Let the rice cool completely, then store it in an airtight container in the fridge for up to 3 days.

Stovetop Cilantro Lime Rice

  • Follow the recipe as discussed earlier. In a pot, add oil, rice, water or broth, and salt to taste. Bring the mixture to a boil, reduce the heat, cover, and cook for 10-15 minutes or until rice is cooked. Rest of the recipe is same as Instant Pot

Notes

Rice-to-water ratio: Use 1¼ cups water per 1 cup rice (scale proportionally for larger batches).
Cook times: White rice - 6 minutes high pressure, 10-minute natural release. Brown rice - 22 minutes high pressure, 10-minute natural release.
Storage: Cool completely, then refrigerate in an airtight container up to 3 days, or freeze up to 2 months.
