Ingredients
  

  • 2 cups fresh pineapple finely diced
  • ½ cup red or orange bell pepper finely chopped
  • ¼ cup red onion finely chopped
  • 1 small jalapeño de-seeded, finely chopped (adjust to taste)
  • ¼ cup fresh cilantro chopped
  • 2 teaspoons lime juice freshly squeezed
  • ¼ teaspoon pink salt or to taste
  • salt & pepper to taste

Instructions
 

  • Finely dice the pineapple, red bell pepper, red onion, and jalapeño.
  • Add all chopped ingredients to a mixing bowl.
  • Stir in fresh cilantro, lime juice, and salt.
  • Mix everything well until evenly combined.
  • Let the salsa rest for 10-15 minutes to allow flavors to meld.
  • Taste and adjust seasoning if needed. Serve fresh.
