This dalia moong dal instant dhokla is a healthy, protein-rich twist on the classic. Made without fermentation, it's soft, fluffy, and perfect for a quick breakfast or snack.

Ingredients
  

For Batter

  • 1 cup dalia broken wheat
  • 1 cup yellow moong dal
  • 1 cup yogurt
  • water as needed
  • 1-2 green chili
  • 1- inch ginger
  • 1-2 garlic cloves optional
  • Salt to taste
  • 1 teaspoon sugar optional
  • 1 teaspoon eno fruit salt
  • 2 teaspoon lemon juice
  • pinch turmeric powder

For Tempering

  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon sesame seeds
  • 8-10 curry leaves
  • 2 green chilies
  • 2 tablespoon water
  • 1 teaspoon sugar optional

For Garnish

  • Chopped cilantro
  • Grated coconut optional

Instructions
 

Step 1: Soak & Grind

  • Soak dalia and moong dal together for 2-3 hours.
  • Drain and grind with yogurt, ginger, green chili, garlic (optional), turmeric powder, and water as needed, to make a smooth, slightly thick batter.

Step 2: Prepare Batter

  • Transfer to a bowl, add salt and sugar (optional).
  • Adjust consistency to a pourable batter (like idli batter).
  • Let it rest for 10-15 minutes.

Step 3: Steam the Dhokla

  • Grease a steaming tray or plate.
  • Just before steaming, add eno and mix gently.
  • Pour batter immediately into the tray.
  • Steam for 6-8 minutes or until a toothpick comes out clean.

Step 4: Prepare Tempering

  • Heat oil, add mustard seeds.
  • Once they splutter, add cumin seeds, sesame seeds, curry leaves, and green chilies.
  • Add water, and sugar (optional), bring to a quick boil.

Step 5: Assemble

  • Pour tempering evenly over the steamed dhokla.
  • Let it absorb for a few minutes.
  • Garnish with coriander and coconut.

Notes

Tips for Perfect Dhokla
  • Use slightly coarse dalia for best texture
  • Do not overmix after adding eno
  • Steam immediately after activating eno
  • Check doneness with a toothpick
 
Variations
  • Add grated carrots or spinach for extra nutrition
  • Make it vegan using plant-based yogurt
  • For gluten-free, replace dalia with rice, oats, quinoa, or millet
