Pakora or Pakoda is a fried snack (fritter), very popular in Indian Cuisine. Pakora can be made using any vegetable, paneer (Indian Cottage Cheese) or even with meat. Basic ingredients for making pakoda is besan or chickpea flour, mixed with Indian spices, and vegetables such as onion, chili and the batter is deep fried, resulting in crunchy from outside and soft from inside pakoda. Served with some green chutney (coriander mint chutney) or ketchup. Pakoda are mainly served as a snack but Punjabi Kadhi is one such main course where pakora are dipped in a kadhi and served. Today, instead of deep frying the pakora, I am making pakora in a Appe/Appam pan on a stove top. A twist to a traditionally recipe, without compromising on taste. A healthier version of pakoda. Ingredients For Pakoda / Appe Batter:
1 cup besan or chickpea flour
1 medium onion, chopped 1 green chili, chopped (optional) 1 teaspoon turmeric powder 1 teaspoon red chili powder 1 teaspoon coriander seeds ½ teaspoon ajwain / carom seeds ⅛ teaspoon Baking soda 2-3 tablespoon fresh methi leaves, finely chopped ½ cup fresh coriander, chopped 2 tablespoon oil ¼ cup - ½ cup water (as needed) Salt to taste Additional oil for making pakoda. |

Instructions for Stove Top Cooking:
Step 1: In a bowl, mix together ingredients for pakoda batter, add water as needed and make a semi-thick batter. Keep it aside for 10 min.
Step 2: After 10 min. Heat the Appe pan, add few drops of oil in each hole. Add around 1 tablespoon of pakoda batter in each hole. Step 3: Cover and cook the pakoda on medium to low heat for 4-5 min or until the base turns golden brown in color. Step 4: Flip the pakoda on the other side, add few drops of oil, cook for 4-5 min or until pakoda is golden brown in color. Step 5: Remove from the pan and serve hot with green chutney. |
