Creamy, rich, and delicious, this microwave mango bhapa doi is an easy twist on the classic Bengali steamed yogurt dessert. Made with hung curd, condensed milk, and mango pulp, it comes together in just minutes without the need for lengthy steaming.
In a mixing bowl, whisk the hung curd until smooth and creamy.
Add condensed milk, mango pulp, and cardamom powder. Mix until everything is well combined and lump-free.
Stir in half of the chopped nuts and saffron.
Pour the mixture into a microwave-safe glass or ceramic dish, ramekins, or individual serving bowls.
Cook uncovered on high for 2 to 2½ minutes. Cooking time may vary depending on your microwave and the depth of the dish. The edges should look set, while the center may have a slight jiggle.
Let the bhapa doi cool to room temperature, then refrigerate for at least 2 hours to allow it to set completely.
Garnish with the remaining nuts and saffron before serving. Enjoy chilled!
Notes
Use thick hung curd or Greek yogurt. If using regular yogurt, strain it through a cheesecloth until most of the whey drains out.
Adjust the mango pulp to taste. If using sweetened mango pulp, you may want to reduce the condensed milk slightly.
Avoid overcooking, as the yogurt can become grainy.
The bhapa doi will firm up further as it chills.
For best results, use a shallow microwave-safe dish or individual ramekins.
