Ingredients

For the Patties

  • 3 cups cooked black beans 2 cans, 15 oz each, drained and rinsed
  • cup yellow onion grated or finely chopped (about ½ medium onion)
  • 2 garlic cloves minced
  • 2 chipotle peppers from a can of chipotles in adobo, finely diced
  • 2 tablespoons adobo sauce from the same can
  • 1 tablespoon tamari or soy sauce
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 large egg
  • 1 cup panko breadcrumbs

For Cooking and Serving

  • 1-2 tablespoons olive oil for skillet or brushing
  • Cooking spray for air fryer or grill
  • 6 burger buns toasted
  • Desired toppings: sliced avocado lettuce, tomato, pickled red onion, chipotle mayo, pepper jack cheese

Instructions

  • Add drained black beans, grated onion, garlic, chipotle peppers, adobo sauce, tamari, balsamic vinegar, cumin, salt, and pepper to a large bowl. Mash with a fork or potato masher until mostly combined but still slightly chunky.
  • Fold in the egg until incorporated, then fold in the panko breadcrumbs. The mixture should hold together when pressed.
  • If the mixture feels too wet to handle, cover and refrigerate for 20 minutes to firm up.
  • Divide into 6 equal portions and shape into patties about ¾-inch thick.
  • Skillet: Heat olive oil in a cast iron or heavy skillet over medium-high heat. Cook patties 4-5 minutes per side until deeply browned and crisp. Flip only once.
  • Grill: Preheat grill to 400°F. Brush patties with olive oil and spray grates. Grill 8 minutes on first side, 4 minutes on second side.
  • Air Fryer: Preheat air fryer to 375°F for 3 minutes. Spray basket and place patties in a single layer. Air fry 10-12 minutes, flipping halfway. From frozen: 14-16 minutes, flipping halfway.
  • Serve on toasted buns with your favorite toppings.

Notes

Vegan: Replace the egg with a flax egg - stir 1 tablespoon ground flaxseed with 2½ tablespoons warm water and rest 5 minutes until gelled.
Gluten-free: Use gluten-free panko (or oats flour) and tamari instead of soy sauce.
Too wet? Refrigerate the mixture for 20 minutes before shaping. Or mash the beans more - the mashed beans are what hold the patty together.
Char = flavor: Don't rush the cook. A deep crust on each side keeps the patty firm and adds the most flavor.
Make ahead: Shaped uncooked patties keep refrigerated up to 24 hours or frozen up to 2 months. Cooked patties keep refrigerated up to 4 days.
Leftover chipotle: Transfer remaining peppers and sauce to a small jar and refrigerate - keeps for weeks and is great in dressings, hummus, or mayo.
