This homemade black bean burger is smoky, hearty, and packed with bold chipotle flavor. Ready in 30 minutes in one bowl - no food processor needed. Cook in a skillet, on the grill, or in the air fryer. Includes vegan and gluten-free options!
Desired toppings: sliced avocadolettuce, tomato, pickled red onion, chipotle mayo, pepper jack cheese
Instructions
Add drained black beans, grated onion, garlic, chipotle peppers, adobo sauce, tamari, balsamic vinegar, cumin, salt, and pepper to a large bowl. Mash with a fork or potato masher until mostly combined but still slightly chunky.
Fold in the egg until incorporated, then fold in the panko breadcrumbs. The mixture should hold together when pressed.
If the mixture feels too wet to handle, cover and refrigerate for 20 minutes to firm up.
Divide into 6 equal portions and shape into patties about ¾-inch thick.
Skillet: Heat olive oil in a cast iron or heavy skillet over medium-high heat. Cook patties 4-5 minutes per side until deeply browned and crisp. Flip only once.
Grill: Preheat grill to 400°F. Brush patties with olive oil and spray grates. Grill 8 minutes on first side, 4 minutes on second side.
Air Fryer: Preheat air fryer to 375°F for 3 minutes. Spray basket and place patties in a single layer. Air fry 10-12 minutes, flipping halfway. From frozen: 14-16 minutes, flipping halfway.
Serve on toasted buns with your favorite toppings.
Notes
Vegan: Replace the egg with a flax egg - stir 1 tablespoon ground flaxseed with 2½ tablespoons warm water and rest 5 minutes until gelled.Gluten-free: Use gluten-free panko (or oats flour) and tamari instead of soy sauce.Too wet? Refrigerate the mixture for 20 minutes before shaping. Or mash the beans more - the mashed beans are what hold the patty together.Char = flavor: Don't rush the cook. A deep crust on each side keeps the patty firm and adds the most flavor.Make ahead: Shaped uncooked patties keep refrigerated up to 24 hours or frozen up to 2 months. Cooked patties keep refrigerated up to 4 days.Leftover chipotle: Transfer remaining peppers and sauce to a small jar and refrigerate - keeps for weeks and is great in dressings, hummus, or mayo.
