Soya Granules Gobi Matar Recipe Using Homemade Bhuna Masala

  • Soak soya granules in hot water for 10 minutes or until soft. Rinse and drain the soy granules.
  • In a cast iron skillet, add oil. Add cauliflower florets, turmeric, and salt. Cook until cauliflower is 90% cooked. Remove and set aside.
  • In the same skillet, add whole spices (jeera, cloves, cardamom, mace, star anise, bay leaf). Sauté the spices for a minute.
  • Add the drained soya granules to the skillet. Sauté for 1-2 minutes.
  • Add the bhuna masala. Cook for 3-4 minutes, allowing the masala to blend with the soy granules.
  • Add green peas and salt to taste. Add water, and deglaze the skillet. Add water as required to adjust the consistency of the sauce. Cover and cook for a few minutes until the oil starts to release.
  • Finally, add the pre-cooked cauliflower to the skillet. Mix everything, and cook for a few more minutes until the veggies are fully cooked.
  • Finish the dish with homemade garam masala for added flavor. Garnish with fresh cilantro.
  • Serve the Soya Granules Gobi Matar with roti, a side of pickles, chutney, or yogurt. Enjoy your delicious and nutritious meal!
