Ingredients
  

  • 3 small Raw bananas, peeled and diced ;(green banana)
  • ½ teaspoon turmeric powder
  • 2 tablespoon Mustard oil
  • 2 whole Dried chili, broken into pieces
  • ½ teaspoon Cumin seeds
  • pinch Hing ;(asafoetida)
  • 2 teaspoon Coriander powder
  • ½ teaspoon Roasted cumin powder
  • ¼ teaspoon Amchur powder ;(dried mango powder)
  • ¼ teaspoon Red chili powder , adjust to taste
  • 1 tablespoon Water
  • Fresh cilantro, chopped
  • Freshly squeezed Lemon juice, adjust to taste
  • salt to taste

Instructions
 

  • Peel and dice the raw bananas. Sprinkle some salt and turmeric on the bananas, and set aside for 10 minutes.
  • Heat mustard oil until it's smoky. Allow it to cool slightly, then add broken dried chili, cumin seeds, and hing (asafoetida).
  • Add the prepared bananas to the hot oil. Saute on high heat for a few minutes until they start to develop a golden color.
  • Add coriander powder, roasted cumin powder, amchur powder, and red chili powder to the sautéed bananas. Mix well to coat the bananas with the spices.
  • Add a splash of water to the pan, cover it, and let the bananas cook on medium-low heat until they are tender. Stir occasionally to ensure even cooking.
  • Once the bananas are cooked, garnish with fresh cilantro (coriander leaves) and (optional) freshly squeezed lemon juice over it for a burst of freshness.
  • Serve the delicious banana fry hot as a side dish or snack.
