Ingredients
 
 

  • 2 lbs ripe tomatoes (about 10-12)
  • 1 onion, quartered
  • 1 garlic bulb, trim ¼ inch top leaving the bulb intact
  • salt and pepper to taste
  • 1-2 tablespoon Olive oil
  • 1 cup veggie stock; or as needed
  • Fresh basil leaves

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Place the halved tomatoes, quartered onion, and garlic bulb (cut side facing upwards) on a baking sheet. Drizzle them with olive oil, and season with salt, and pepper.
  • Roast the tomatoes in the preheated oven for about 30-40 minutes, or until they are soft and slightly caramelized.
  • Remove the roasted veggies from the oven and allow them to cool slightly.
  • Transfer the roasted vegetables and a handful of fresh basil leaves to a blender or food processor. Blend until smooth. If you prefer a chunkier soup, you can pulse the mixture a few times to leave some texture.
    Note: Squeeze the roasted garlic from the bulb and add it to the blender.
  • If you prefer a smoother texture, you can strain the soup through a fine-mesh sieve for a smooth, velvety texture.
  • Pour the blended tomato mixture into a large pot. Add veggie stock to adjust consistency.
  • Place the pot over medium heat and bring the soup to a simmer. Allow it to simmer for about 10-15 minutes, stirring occasionally.
  • If you'd like a creamier soup, you can add the heavy cream at this point and stir until it's well incorporated. Adjust the seasoning with salt and pepper to taste.
  • Once the soup is heated through and well-blended, remove it from the heat.
  • Serve the roasted tomato soup hot, garnished with fresh basil leaves or parsley, if desired.
  • You can also customize this basic recipe by adding other ingredients like roasted red peppers, carrots, or herbs to suit your taste.
