Savor the flavors of North India with this delectable Kaddu Ki Sabzi! A perfect blend of sweet and savory, this pumpkin curry is sure to warm your soul.
Heat oil in a pan or kadai over medium heat. Add mustard seeds, asafoetida, and broken dry red chili. Allow the seeds to splutter.
Add the cubed pumpkin pieces and sauté for few minutes.
Add turmeric powder, red chili powder, coriander powder, amchur powder, and salt. Mix well and sauté for a few more minutes until the spices are well coated.
Reduce the heat to low, cover the pan, and let the pumpkin cook for about 10-15 minutes or until it becomes soft and tender. Stir occasionally to prevent sticking to the bottom of the pan.
Once the pumpkin is cooked, add garam masala (optional) and mix well.
Garnish the Kaddu Ki Sabzi with fresh cilantro leaves and serve hot with roti (Indian flatbread), paratha, or poori
