North Indian Hare Matar Ki Sukhi Sabji is a delightful dry curry made with green peas, and sautéed with aromatic spices like cumin, turmeric, and coriander.

Ingredients
  

  • 12 oz frozen petite green peas matar
  • 1 Optional: onion, chopped
  • 2 tablespoons oil or ghee clarified butter
  • 1 teaspoon cumin seeds jeera
  • 1-2 green chilies slit lengthwise (adjust to your spice preference)
  • 1 teaspoon ginger chopped
  • ½ teaspoon turmeric powder haldi
  • 2 teaspoon coriander powder dhaniya
  • ½ teaspoon cumin powder jeera powder
  • ½ teaspoon amchur powder dried mango powder
  • ½ teaspoon red chili powder adjust to taste
  • pinch of asafetida
  • Salt to taste
  • Chopped fresh coriander leaves for garnish
  • Optional: Freshly squeezed lemon juice.

Instructions
 

  • Heat oil or ghee in a pan or kadai.
    Note: For vegan, use oil.
  • Add cumin seeds (jeera), and asafetida, and let the seeds splutter.
  • (Optional): Add finely chopped onions and sauté until they turn translucent.
  • Add ginger and green chilies. Sauté for a few seconds until the raw aroma disappears.
  • Add turmeric powder (haldi), coriander powder (dhaniya), cumin powder (jeera powder), amchur powder (dried mango powder), red chili powder, and salt. Mix well and cook for a few minutes until the spices are roasted and fragrant.
  • Add green peas (matar) to the pan and mix them with the spice mixture.
  • Cover the pan with a lid and cook on low to medium heat. Stir occasionally to prevent sticking.
  • Cook until the green peas are tender. If needed, you can add a little water to facilitate cooking.
  • Once the green peas are cooked, garnish with chopped fresh coriander leaves.
  • Your matar ki sabji is ready to be served. It can be enjoyed with roti, paratha, or Khasta Poori, and homemade yogurt.
