Air Fryer Eggplant / Baingan Fry

Air Fryer eggplant is one of the best air fryer recipe I have tried thus far. This healthy air fryer recipes, fried eggplant is the best ways to cook eggplant.

Ingredients
  

  • 1 American Eggplant around 1 -1.5 lbs, chop into long, thin pieces
  • ½ tablespoon coriander powder
  • ½ teaspoon cumin powder
  • 1//2 teaspoon red chili powder as per taste
  • ½ teaspoon turmeric powder
  • ½ teaspoon dry mango powder optional
  • 2 tablespoon oil
  • Salt to taste
  • Oil for frying If using Stove Top Cooking

For garnish:

  • Handful of fresh cilantro

Instructions for Air Fryer Cooking:

  • Wash and pat dry eggplant, chop into long, thin pieces.
  • In a mixing bowl, add chopped eggplant, 1 tablespoon of oil, followed by dry spices. Mix well, so the spices coat evenly onto the eggplant pieces.
  • Pre-heat the air fryer to 370*Transfer the eggplant into the air fryer basket. Air fry eggplant at 370*F for 9 min. After 9 min, remove the basket, drizzle ½ tablespoon of oil, and shake the basket well.
  • Air fry the eggplant again at 370* F for 9 min. After 9 min, remove the basket, add ½ tablespoon of oil, shake the basket well.
  • Place the basket inside the air fryer, now depending upon the doneness of the eggplant, air fry for additional 5-7 min or until desired crispiness. I air fried for additional 7 min.
  • Garnish with some fresh cilantro. Serve hot with some bread or roti, and some lentil/dal. Enjoy!!

Instructions for Convention Oven Cooking:

  • Wash and pat dry eggplant, chop into long, thin pieces.
  • In a mixing bowl, add chopped eggplant, 2 tablespoon of oil, followed by dry spices. Mix well, so the spices coat evenly onto the eggplant pieces.
  • Pre-heat the oven to 370*Spray 9*13 inch baking tray with some cooking oil. Transfer the eggplant onto a baking tray, into a single layer. Bake eggplant at 370*F for 9 min. After 9 min, remove the baking tray, now depending upon the doneness of the eggplant, bake for additional 5-7 min or until desired crispiness.
  • Garnish with some fresh cilantro. Serve hot with some bread or roti, and some lentil/dal. Enjoy!!

Instructions for Stove Top Cooking:

  • Wash and pat dry eggplant, chop into long, thin pieces.
  • On a high heat, in a wok/kadai, add oil, when the oil is hot, add eggplant. Sprinkle some salt as you fry. Fry eggplant until light golden brown. Remove it on a paper towel, so that the excess oil is absorbed. Fry the eggplant into batches.
  • Add dry spices and mix well.
  • Garnish with some fresh cilantro. Serve hot with some bread or roti, and some lentil/dal. Enjoy!!

Notes

1. Depending upon the size of the eggplant pieces, the time will vary in all cooking methods.
2. Thinner eggplant pieces will take less cooking time, as compared to thick eggplant pieces.
3. Adjust the spiciness as per taste
4. You can use any type of eggplant in this recipe, Indian, American or Chinese eggplant taste great.
5. Different Air Fryer and Convention Oven will vary in cooking time. Please use timing as a guideline.
