Spinach Zucchini Stir Fry | Indian Zucchini Recipe

Ingredients
  

  • 2 medium Zucchini , sliced or diced
  • 2 cups Spinach (4 oz) , chopped
  • 1-2 Green chili , finely chopped; to taste
  • 1 teaspoon Grated ginger
  • 1 teaspoon Cumin seeds
  • 1 pinch Hing (Asafoetida)
  • 1-2 whole Dry red chili , broken
  • 2 teaspoon coriander powder
  • ¼ teaspoon red chili powder , to taste
  • 2 tablespoon Oil
  • Freshly squeezed Lemon juice , to taste
  • ¼ teaspoon Optional: Garam masala
  • chopped cilantro for garnish (optional)

Instructions
 

  • Heat oil in a cast-iron skillet.
  • Add cumin seeds, hing, and broken red chili. Allow the seeds to splutter.
  • Add diced zucchini, green chili, grated ginger, turmeric, and salt. Mix and stir-fry at high heat for 2-3 minutes until slightly charred.
  • Add ground spices - coriander powder and red chili powder. Toss to coat the zucchini.
  • Toss in the chopped spinach, add salt, and cover. Cook for 2-3 minutes or until the spinach is wilted.
  • Add freshly squeezed lemon juice and optional garam masala. Mix well.
  • Serve the Zucchini Spinach Stir Fry with roti or paratha.
