Zucchini Cheese Bread | Quick Savoury Zucchini Loaf

Ingredients
  

  • 1 ½ cups shredded Zucchini - no need to peel and do not squeeze the moisture.
  • 1 ½ cups shredded Cheddar cheese , reserve 2 tablespoon; (I used sharp cheddar)
  • ¼ cup Spring Onions or Chives, chopped
  • 1 Jalapeno ,seeded and chopped finely (Optional)
  • 2 large eggs ,at room temperature
  • ¾ cup sour cream ,at room temperature (I used light sour cream)
  • ¼ cup unsalted, melted butter ,at room temperature
  • 2 cups all-purpose flour ,sifted
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • salt
  • red chili flakes (optional)
  • teaspoon garlic powder

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  • In a large bowl, whisk together eggs, sour cream, and melted butter until well combined.
  • In a separate bowl, whisk together flour, baking powder, baking soda, salt, and garlic powder.
  • Gently fold the dry ingredients into the wet ingredients until just combined.
  • Stir in the shredded zucchini, chopped green onions, and shredded cheddar cheese. Mix until evenly distributed throughout the batter.
  • Transfer the batter to the prepared loaf pan, spreading it evenly. Sprinkle some cheese on top.
  • Bake in the preheated oven for about 50-70 minutes or until a toothpick inserted into the center comes out clean.
  • (Optional) If the cheese on top starts to brown too quickly during baking, cover the bread loosely with aluminum foil to protect it while the inside continues to cook.
  • Allow the zucchini cheese bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Once at room temperature, slice and enjoy!
