Gajar Matar Ki Sabji | Quick Carrot and Green Peas Stir Fry

Gajar Matar Ki Sabji! This classic North Indian dish blends sweet carrots and tender green peas, creating a vibrant and flavorful medley of seasonal goodness.

Ingredients
 
 

  • 3-4 medium carrots chopped
  • 1 cup frozen green peas
  • 2 tablespoon mustard oil or vegetable oil
  • ½ inch ginger chopped
  • 1-2 green chili chopped; adjust to taste
  • 1 teaspoon cumin seeds
  • pinch of hing asafeotida
  • ½ teaspoon turmeric powder
  • 2 teaspoon coriander powder
  • ½ teaspoon amchur powder or lemon juice adjust to taste
  • 1 tablespoon kasoori methi hand crushed
  • salt to taste

Instructions
 

  • Heat Mustard oil in a pan over medium heat until it reaches its smoking point. Then, lower the heat.
  • Add Jeera and let it splutter. Add Hing and sauté for a few seconds.
  • Add finely chopped Ginger and Green chillies. Sauté until the ginger turns golden brown.
  • Add chopped Carrots and cook for 3-4 minutes, stirring occasionally.
  • Sprinkle Salt and Turmeric powder over the carrots. Mix well.
  • Add frozen Green peas and continue to cook for another 3-4 minutes.
  • Now, add Amchur powder, Kasoori Methi, and Coriander powder. Mix well and let it cook for 2-3 minutes.
  • Cover the pan with a lid and let the vegetables cook on low heat until they are tender. Stir occasionally to prevent sticking.
  • Once the carrots and peas are cooked, check for seasoning and adjust if necessary.
  • Garnish with fresh coriander leaves (optional) and serve the Gajar Matar Ki Sabji hot with chapati or rice.
