Healthy Chocolate Zucchini Bread

  • Preheat the oven to 350°F (175°C). Grease a 9-by-5-inch loaf pan or line with parchment and set it aside.
  • In a medium bowl, combine dry ingredients – flour, cocoa powder, baking soda, and sea salt. Set aside.
  • In a large bowl, whisk together wet ingredients – eggs, oil, yogurt, sugar, and vanilla extract. Stir in the shredded zucchini until just combined.
  • Then with a spatula, fold the dry ingredients into the wet ingredients. Don’t overmix the batter. Stir in ½ cup of the chocolate chips.
  • Pour the batter into the prepared pan. Sprinkle the remaining chocolate chips over the batter.
  • Bake the bread for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
    Note: There may be slightly melted chocolate on the toothpick and that’s fine.
  • Remove the pan from the oven and place it on the cooling wire rack for about 10 minutes. After 10 minutes, run a clean knife around the edges of the bread, and carefully remove it from the pan. Let the bread slightly cool on the wire rack. Carefully, cut the bread with a serrated knife.
  • Enjoy a warm slice of this healthy chocolate zucchini bread with a cup of espresso!
